Egg Drop Soup Before Practice
Dinner in a short window before practice, a little extra seasoning, and a plan to try this soup again with chicken.

I have a small window to get dinner on the table before practice. I'm trying to feed everyone something nutritious, with carbs and protein, without making it too heavy. I've made dinners that were too heavy before practice, so I'm trying to get that balance right.
The egg drop soup with ginger and rice caught my eye because it looked quick and easy. I used coconut milk instead of water to cook the rice. The soup needed more salt, so I added some chili sauce to jazz it up and an extra teaspoon of soy sauce. That got the salt about right, and I enjoyed it.
The kids felt like it wasn't filling enough. When we talked about what we'd change, they thought chicken would make it heartier.
I had two bowls myself and still felt like I needed more. I'd expected the rice to give me that full feeling. Then again, I'd skipped lunch after a breakfast burrito that morning, so I probably shouldn't put all of that on the soup.
About an hour later, I was walking around the rink during practice when I noticed I wasn't hungry anymore. I wasn't getting on the ice, just walking around, and I didn't feel like I was going to crash from the carbs either. That surprised me after finishing dinner thinking I'd need something else to eat later.
Hockey practice is intense, and the kids can feel it on the ice if dinner is too rich. I usually hear about it after practice, but they didn't mention any problems that night. I took that as a good sign.
I'll make it again. Next time I'll buy a bag of rotisserie chicken to go with it and see if that makes it the heartier dinner the kids had in mind.
